François Brault is the President and Chief Bread Architect of Panifica, an artisan bakery established in Paris at the foot of the Sacré-Coeur. At Panifica all products are home-made and all their breads are made using organic yeast and flour. Panifica uses ancient flours and also campaigns with millers to encourage them distribute these exceptional flours.
