The bakery products market is undergoing a major transformation due to changes in and the globalisation of consumption. The European tradition of baking and pastry-making is increasingly moving towards new trends and “exotic” products with strong Anglo-Saxon origins, in terms of bread, pastries and cakes.

As for regional specialities, they are becoming more national and even international. In addition to this demand for international specialities, other changes in consumer preferences are influencing the market: we are seeing a reduction in the domestic consumption of bakery products, replaced by the consumption of these same products outside the home.
