INSPIRATION ALMOND

Inspiration Almond is the first ever fruit couverture created by Valrhona. It’s the fruit as you have never seen, tasted or worked with before. Inspiration Almond is made using real fruit, without any preservatives, added colors or artificial flavors. In terms of its composition, it may be a very simple product, but it still took us a lot of work to get the recipes, manufacturing techniques and culinary applications just right. Therefore, we have drawn on all our chocolate-making expertise to develop this technical feat which combines the unique texture of chocolate with the intense flavor and color of fruit. #goboldwithvalrhonafruit

DULCEY 32%

The first notes of Dulcey chocolate are buttery, toasty and not too sweet, gradually giving way to the flavors of freshly baked shortbread with a pinch of salt. How an oversight became a marvel! During a pastry demonstration, Frédéric Bau left some white chocolate in a bain-marie for too long. After realizing what had happened, he had a look and noticed that the color had turned blond and the chocolate was emitting a delicate scent of freshly baked shortbread and caramelized milk. It took another 8 years of research and development to arrive at the Dulcey we know today, and to perfect a unique recipe for a new world of creativity and flavors.

ORELYS 35%

Thanks to its muscovado sugar, BLOND ORELYS’s natural color is flecked with glimmers of golden brown, making for an irresistible invitation to sensory discoveries. This chocolate’s sweet gourmet freshness is clear from the very first bite thanks to its classic licorice aromatic notes which are later complemented by hints of biscuit.

BAHIBE 46%

Bahibe explores new territory with an intense milky and chocolatey couverture. Withdark-chocolate edges and a heart of pure milk chocolate, Bahibe provides a new balance between the milky sweetness and bitterness of a single-origin cocoa bean from the Dominican Republic.

GUANAJA 70%

Guanaja came about in 1986 as a result of Valrhona’s quest to create a chocolate with original cocoa flavor. It is the first chocolate in the world that could boast a cocoa content as high as 70%. It is now reputed as one of the great classic dark-chocolate couvertures. The first in Valrhona’s Mariages de Grands Crus collection, Guanaja has over the years garnered the reputation as the iconic Valrhona chocolate, reflecting the company’s know-how and expertise. Recognized worldwide by top chefs and confectioners, Guanaja embodies Valrhona’s commitment totaste and entices the most demanding palates with its unparalleled flavor profile.

P125 COEUR DE GUANAJA 80%

In some recipes, the cocoa butter in the chocolate couvertures limits the amount of chocolate that can be used (i.e. the chocolate flavor is weak with a lighter color) or requires the use of cocoa powder. From the same blend of fine cocoa beans as Guanaja, Cœur de Guanaja 80% is the key to boosting the chocolate intensity of many recipes, without affecting the consistency. Less sweet an cocoa butter than a typical couverture, the aromatic intensity of Cœur de Guanaja 80% is fortified by a higher concentration of dry cocoa solids.

NYANGBO 68%

Through dedicated efforts in selecting and sourcing, as well as overriding prejudice, Valrhona wished to give prominence to these cocoa beans from Africa and, with the creation of Nyangbo, purveyeda single-origin Grand Cru de Terroir. Nyangbo offers uniquely rounded notes with a warm chocolatey taste, giving way to a second attack filled with warm spicy flavors.

MANJARI 64%

To highlight the qualities and characteristics of these cocoa beans, which had previously not garnered much recognition, Valrhona created Manjari in1990. The first Grand Cru de Terroir from Madagascar quickly became one of the great Valrhona classics. By working closely with growers on the fermentation processes, Manjari liberates fresh and acidic notes of red fruit with a delicate finish of roasted nuts.
